So glad to know there is another person who has a high regard and love for chickweed. I use it nearly every day in my breakfast green smoothies, putting a big handful in with other weeds like plantain, dandelion, nettle, red clover leaves and even young ox eye daisy leaves, along with kale and any other greens. I also use the fresh growing tips of chickweed in salads. The budgies love it too and get some every day and even the musk lorikeet delicately nibbles the seeds out of the finished flowers. As you rightly describe it is a highly nutritious plant and it's qualities are not commonly known or valued. The best part of it is that it volunteers to grow and it's free food. What a 'star' it is! (It's latin name stellaria meaning 'little star' and media meaning 'in the midst of').
