365 Days of Fun and Chillaxation – Blog#105 – Tamarillo, Chocolate and Banana Muffins (wheat and dairy free!)

Hello there,

Guess what finally happened?  Just over 100 blogs into my year of blogging about the good in life, last night, I forgot to post this blog yesterday.  Things got a little busy here at Happyzine HQ and I woke up at around three in the morning realising I hadn’t posted it.  So here it is, yesterday’s blog:

Yesterday morning I began my day via the ancient art of baking, because I was excited about the Positive Writing Course I’m just starting and I needed to calm myself.  I love the feeling of standing in the kitchen with my flours and baking powder and fruits all lined up and ready to be poured into the latest culinary creation (though others might not call it that).

I adore cooking with organic, wheat free flours, in particular I love mixing equal amounts of buckwheat flour and brown rice flours.   They balance each other out with their complementary flavours and rise up beautifully, appearing almost wheaty (funny that I’m using that as a complement, but I digress).

Here’s my recipe:

1 Cup brown rice flour

1 Cup buckwheat flour

Half cup oil

Quarter cup sugar

3 teaspoons baking powder

1 Cup water

1 Cup mashed banana and tamarillo

Chocolate – preferably plain dark (the chocolate I used was just a little too competitive with the other flavours)

1 pinch of Cinnamon (optional)

Directions

Beat the egg, sugar, oil and water first.  Add the the rest of the ingredients (apart from the fruit and choccie).  Once it’s all mixed, last of all mix in the fruit and choccie.

Bake at 180 Celsius for around fifteen minutes.  Scrumptious!

It’s funny, the actual eating of the muffins took a backseat to the preparation of them, in terms of the most pleasure I took.  For me, baking is like moving meditation – gather, add, mix, taste, clear surfaces, smell mixture, add something more, pour into oven containers, slide into over, watch the ingredients working their magic together, rising, growing, darkening.  Remove, cool, share with all.

I do have images to share too, but the cord is five kms away from me at present and shall have to be retrieved tomorrow.  So just try and hang on till then! And you shall feast your eyes.
