365 Days of Fun and Chillaxation – Blog 260 – Let’s Talk About Food Baby! Namely Satay Sauce.
I arrived home from work today a tired, ravenous beast. I had one meal on my mind and all the ingredients to make it: satay tofu pita bread thingies with as much salad as I could fit into those little pita pockets. With a fierce single mindedness I whipped up the meal within half an hour and was soon standing over it observing it with a reverence usually reserved for other people’s food. Ahh yes. I’d provided for myself well. And so I thought I’d share with you my most fabulous satay sauce recipe. Here she is:
1 huge onion
Oil
Two enormous dollops of peanut butter (the more natural the better, and the more you can fit on the tablespoon the better)
1 small tin of coconut cream
1 pinch of cayenne pepper
Salt and pepper
Tamari for taste
Directions – gently fry the onion in a pot, with the small pinch of cayenne pepper. Stir it all in together and then, when the onions are clear and obviously cooked add your enormous dollops of peanut butter. You’d better quickly add the coconut cream, followed closely by the salt and pepper (or the peanut butter will burn on the bottom of the pot). Stir until cooked through to create a creamy satay sauce. Add as much tamari sauce as you need to bring a little more body into the flavour. Yum! Add to everything. Including breakfast, if you like.
