Natacha Lee’s Locavore Omlette

Kiwis eating food grown and produced within a 200 km radius for 30 days of April in the Happyzine Eat Local Challenge.
Omelet (serves 4):
– 5 eggs
– dash of milk or cream
– 3-4 mushrooms (I used button mushrooms this time round)
– 2 cloves garlic
– Handful parsley
– Waimata camembert cheese
Slice the mushrooms and cook in a pan with a knob of butter. Once soft add garlic and turn heat off. Cool slightly. Meanwhile mix eggs and milk in a bowl, add chopped parsley and mushroom mix and season with salt and pepper.
Put knob of butter in the pan and pour the mix in. Stir a few times then let it cook on low heat. Add slices of the camembert cheese on top then cook further with a lid on. The omelet is ready when the sides start to come off (beware not to burn the bottom!).
