Mel makes Natacha’s Local Ratatouille

Kiwis eating food grown and produced within a 200 km radius for 30 days of April in the Happyzine Eat Local Challenge.
I found a rogue zucchini in the garden and had a very wrinkled eggplant in the frig that needed using so picked some capsicums and set to making Natacha’s ratatouille from an earlier blog. I have always wanted to make ratatouille that doesn’t turn into a mush and never thought of cooking all the elements separately and then adding them to the already reduced tomatoes. So thank you Natacha!
